Pumpkin And Provolone Valpadana PDO fritters
Ingredients
- 100 g of Provolone Valpadana PDO
- 500 g peeled and seeded pumpkin
- 2 tbsp olive oil
- 4 eggs
- ½ red onion, thinly sliced
- ¼ cup flat leaf parsley
- 1 cup (100 g) grated
- 50g plain flour
- ¼ cup olive oil for frying
Preparation
Chop the pumpkin into small squares about 2 cm. Place the pumpkin into a baking tray drizzeled with a little oil, and bake until the pumpkin is cooked but not too soft. Mix with Provolone Valpadana PDO and all the ingredients together. Heat a fry pan or grill plate, spray with a little olive oil and place spoonfulls of mixture onto the plate, cook on both sides until slightly golden approximately 3-4 minutes.
